Ingredients For Salmon:

  • 2 x 4-6 oz salmon fillets

  • 1 tablespoon of low sodium soy sauce or tamari

  • 1 tablespoon of honey

  • 1 tablespoon of sriracha

  • 1 teaspoon of minced garlic

  • 0.5 tablespoon of water


Ingredients For Bowl:

  • 1 cup cooked white or Jasmine rice

  • 0.5 avocado

  • 0.5 cucumber, sliced


    Instructions:

    1. Cut your salmon into one-inch cubes. You can remove the skin if preferred.

    2. In a large bowl, whisk together all the ingredients for the marinade.

    3. Add the salmon cubes to the marinade and let it marinate for at least 20 minutes, or up to an hour for best flavor.

    4. After marinating, heat a large skillet with a splash of oil over medium-high heat. Add in the marinated salmon cubes. Keep the remaining marinade aside for now.

    5. Cook the salmon for 2-3 minutes on each side until it gets a nice crisp and cooks through.

    6. Add the reserved marinade to the skillet and cook until the sauce thickens slightly.

    7. Assemble your bowl with cooked rice as the base, then add the cooked salmon cubes, sliced avocado, and cucumber. Feel free to add any other healthy toppings you like.
